Yoghurt Coconut Healthy Pancakes

It’s a Pancakes Day every day if you know how to make those healthy guilt-free pancakes. And I had to learn as many recipes as possible to satisfy my pancake craving through the year. So here is another one – light like a sky, delicious pancakes which this time I topped with raisins. Try this recipe and be amazed at no risk to your waistline! 

 

4 large eggs

1 cup Greek yoghurt

vanilla extract (read instructions on yours – may vary from a few drops to a tbsp) 

6 tablespoons (42 grams) coconut flour

½ teaspoon baking soda

Coconut oil 

Optional: raisins 

  1. Mix all the ingredients except for coconut oil and leave to rest for 5 minutes. 
  2. Pre-heat coconut oil in a pan; place your future pancakes
  3. Fry from each side until golden. 
  4. Form a pile of pancakes and top with what you prefer: maple syrup, peanut butter, healthy ice-cream, fruits, nuts and anything else you may imagine…be creative!
