Salmon Starter with Orange dressing and Avocado Mousse

Smoked Salmon and Avocado are perfect for each other like bread and butter, like ice cream and rum, like Gucci shoes and Gucci bag. So here is just another delicious and quick recipe with this perfect combination and interesting serving. I find it very handy for when I host any party or dinner. Canapés are so 90s now.

(How much product you need will depend on the number of glasses you would like to make, one glass is 1 salmon slice and a tsp of avocado mousse) 

Smoked Salmon

Avocado

Cream Cheese

Juice of orange and olive oil (2:1)

Salt, chilli (to taste)

  1. Mash avocado and cream cheese (1:1 or 2:1, it is up to your taste), add a pinch of salt and puree with a blender. Leave to cool.
  2. Mix orange juice and olive oil 2:1. Soak salmon in this dressing for at least 5 minutes.
  3. Serve salmon in a martini glass, you can add 1/2 tsp of the dressing. Top with mousse and few chilli flakes to taste. Add a crispy bread on top.

Despite the look, this is tested many times and if you serve it right, your guests can easily consume it in one bite. I serve it with a starter fork, and thus avocado basically is served on top of one edge of salmon it is easy to pick the whole starter at once, place it on a crispy bread and put straight to your mouth. And it is light and delicious! Great start to the dinner or an accompaniment for champagne.
