1 kg purple potatoes
300 gr plain flour + extra if needed
1 small free-range egg beaten
a pinch of sea salt
🥣Roast or boil your potatoes and mash them very well into a smooth purée.
🥣 Add am egg and seasoning, mix in.
🥣Add flour and mix the dough. You don’t want to overwork it but make sure it’s not sticky.
🥣 Slice a small portion of dough and gently roll into a thread about 1/2 inch thick.
🥣Cut the thread into 2 cm thick logs, then make an indent with your index finger and roll each gnocchi on a gnocchi board, or “mark” them on the tines of a fork.
🥣Transfer gnocchi to a well-floured baking tray and repeat with remaining dough.
🥣Cook gnocchi in lightly salted soft-boiling water, for 2-4 minutes until they rise on the surface and are cooked.
