Homemade Tom Yum

I have now made this delicious Tom Yum quite a few time, we just love it at home! Heartwarming, zesty and takes only 20 minutes to cook – it will make a perfect weekend lunch or dinner.

My Home Made Tom Yum

1 tsp coconut oil
2 cloves of garlic
Tom yum paste (I use one portion, approx 1 tbsp)
Lime (zest and juice of 1/2)
Vegetable stock – 3 cups
Mushrooms – 1 cup
Red bell pepper – 1/2 cup
Rice noodles
King prawns – 1 cup
Corriander
Chilli

1. Heat up coconut oil in a saucepan
2. Add 2 cloves of garlic, fry until golden
3. Add the zest of lime and tom yum paste, fry stirring through to release flavors
4. Add mushrooms and peppers, fry through
5. Add lime juice, add hot vegetable stock, bring to boil
6. Once boiling, add rice noodles, cook according to instructions adding prawns one minute until the noodles are ready, prawns don’t need too long or they will be overcooked
7. Once cooked, add coriander and chili

That’s it, 20 minutes – delicious healthy soup is done.
