Coconut Energy Balls

Energy balls are too tasty, healthy and convenient to ever get old. Nothing left to say, here are some Coconut ones! 

1/3 cup of dried apricots 

1/3 pitted dates 

1 tbsp peanut butter ( I prefer crunchy one for this recipe) 

2 tbsp shredded coconut + extra for the top

1 tsp coconut oil 

  1. Mix all the ingredients in a blender 
  2. If the mixture is not sticky enough, add some dates and more coconut. Make the energy balls with your hands  and cover them in that extra coconut 
  3. Leave in a fridge to cool down, or store in a freezer for weeks.
