Energy balls are too tasty, healthy and convenient to ever get old. Nothing left to say, here are some Coconut ones!
1/3 cup of dried apricots
1/3 pitted dates
1 tbsp peanut butter ( I prefer crunchy one for this recipe)
2 tbsp shredded coconut + extra for the top
1 tsp coconut oil
- Mix all the ingredients in a blender
- If the mixture is not sticky enough, add some dates and more coconut. Make the energy balls with your hands and cover them in that extra coconut
- Leave in a fridge to cool down, or store in a freezer for weeks.
