Cherry Protein Cake

It is now Autumn: cold dark mornings, cold dark evenings, lack of motivation and comfort food cravings. Well…we all have them. The difference between those of us who will have their 6-pack by New Years and those who will not fit in they clothes by then – is the choices we make now. No need to suffer eating plain salads. Just some creativity, and you can have that inner foodie satisfied without gaining extra cm on your waist. He is a cherry protein cake, which is as abs-friendly as delicious!

 

3/4 cup Egg whites

1/2 cip Whey vanilla protein powder (or flavour of your choice)

1 banana

1/2 cup rolled oats

2 tbsp coconut flour (flakes will work too)

1 tsp baking powder

1 handful of pitted cherries 

Cherry compote to serve with 

  1. Preheat oven to 160C
  2. Blend all the ingredients together, except for cherries 
  3. Add your cherries and place batter into your cupcake or loaf pan, remember that it will ‘grow’ so do not fill the pan for more than 3/4
  4. Bake 35-40 minutes
  5. Remove from the oven and leave to cool
  6. Serve with cherry compote or any healthy option of your choice
